Old Pal Cocktail

Ingredients:

  • 1.5 RyeIMG_4332
  • 0.75 Campari
  • 0.75 Dolin Dry

Instructions:

Combine all ingredients in a mixing glass. Fill with ice. Stir and strain. Serve up with a lemon peel garnish, ideally in a Nick and Nora glass.


Thoughts:

A classic cocktail that offers a different bend than either the Negroni or the Boulevardier, whilst sporting obvious similarities to both. In contrast to either drink, the dry vermouth leaves the drink feeling a bit lighter and brighter than its more robust cousins. Invented sometime in the 1920s, this lesser-known drink is a nice choice before a meal on a spring or summer evening.

Hillside Cocktail

This cocktail was developed by Varnish in LA.

Ingredients:

  • 1.5 dry gin
  • 0.75 Amaro Nonino Quintessentia
  • 0.75 Dolin Dry Vermouth
  • 3 dashes Elixir Végétal de la Grande Chartreuse (a barspoon of Green Chartreuse will work in a pinch)

Instructions:

Combine all ingredients in a mixing glass. Stir. Serve up with expressed lemon twist as garnish.


Thoughts:

A lovely, delicate cocktail. Works very well with a juniper-forward gin, but you must avoid bargain vermouths at all costs. The Nonino provides a smooth sweetness and subtle depth.

However, the star of this show is the Elixir Végétal which, whilst being used as a sort of bitter to bind everything together, adds the fundamental character to this drink. A rather unusual ingredient, Elixir Végétal is the original chartreuse formulation, virtually unchanged for centuries (with a slight dip in the ABV to comply with government regulations). It’s generally similar to Green Chartreuse, but it’s far more pungent, intense, and concentrated. If it suits you, you can double the proportion called for to bring the chartreuse undertones to the forefront. Unfortunately, the ingredient is not available in North America to my knowledge, although it can occasionally be found online for a reasonable price.
